Eggstravaganza and Deviled Eggs with Iowa Egg Council

We go through a lot of eggs at our house, and we’re empty nesters! We like deviled eggs, bacon and eggs for breakfast, hash brown and egg bake, we like them hardboiled, in savory dishes, you name it. Plus, I bake a lot so when we buy eggs, it’s more than a dozen at a time.

Like sugar and butter, eggs are an ingredient I can’t imagine being without. When I learned that my neighboring state of Iowa leads the nation in egg production, I just had to invite people who are involved in and support the industry in their own ways.

So for the fiftieth episode of Funeral Potatoes & Wool Mittens, we’re heading to Iowa this week to speak with Iowa Egg Council’s Board Chairman Bruce Dooyema, and Director of Marketing and Communications Melissa Alto-Kintigh about one powerhouse food—eggs.

Shrimp Deviled Eggs

Ingredients
  

  • 12 hard boiled eggs
  • ½ – ⅔ cup Miracle Whip (as needed)
  • 3 Tbsp extra hot horseradish
  • 3 Tbsp diced up large cooked shrimp
  • ¼ tsp dill weed

Instructions
 

  • Peel eggs, cut in half lengthwise. Separate the yolks from the whites.
  • In a plastic bag, mix together the yolks, Miracle Whip, horseradish, diced shrimp and dill weed. Zip the bag shut, snip off a corner end and pipe the mixture into the egg whites.
  • Top with 1 large, cooked Shrimp
    -Top with Chopped Chives
    -Sprinkle with a little Cajun Seasoning
    -Added option – top with cocktail sauce when serving

Smoked Deviled Eggs

Ingredients
  

  • 12 hard boiled eggs, after peeled, smoke 1hr @ 165 super smoke / turn eggs and smoke another 30 mins
  • ⅓ – ½ cup Miracle Whip (as needed)
  • 2 Tbsp stone ground mustard
  • 1 Tbsp apple cider vinegar
  • 2 Tbsp Traeger Que or any BBQ sauce
  • 2 Tbsp diced pickled jalapeños
  • ½ tsp garlic hickory seasoning

Instructions
 

  • Cut smoked eggs in half lengthwise. Separate the yolks from the whites.
  • In a plastic bag, mix together the yolks, Miracle Whip, stone ground mustard, vinegar, BBQ sauce, and diced jalapeños. Zip the bag shut, snip off a corner end and pipe the mixture into the egg whites.
  •             -Top with 1 sliced Pickled Jalapeno
                -Sprinkle with Garlic Hickory Seasoning

  • 1 Roma tomato, diced
  • 2 Tbsp cilantro

  • 2 Tbsp red onion, diced
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions
 

  • Peel eggs, cut in half lengthwise. Separate the yolks from the whites.
  • In a plastic bag, mix together the yolks, Miracle Whip, mashed avocado, tomato, cilantro, lime juice, onion, salt and pepper. Zip the bag shut, snip off a corner end and pipe the mixture into the egg whites.
  • -Sprinkle with Paprika
    -Added option – top with tortilla chip when serving
    -Another  option – top with Sriracha Dressing
