Avocado Deviled Eggs

Give your deviled eggs a fresh flair with the addition of avocado, cilantro and lime juice. Recipe courtesy of Bruce Dooyema of the Iowa Egg Council.

Ingredients
  

  • 12 hard boiled eggs
  • ¼ - ⅓ cup Miracle Whip (as needed)
  • 2 avocados
  • 1 Roma tomato, diced
  • 2 Tbsp cilantro
  • 5 Tbsp lime juice
  • 2 Tbsp red onion, diced
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions
 

  • Peel eggs, cut in half lengthwise. Separate the yolks from the whites.
  • In a plastic bag, mix together the yolks, Miracle Whip, mashed avocado, tomato, cilantro, lime juice, onion, salt and pepper. Zip the bag shut, snip off a corner end and pipe the mixture into the egg whites.
  • -Sprinkle with Paprika
    -Added option - top with tortilla chip when serving
    -Another  option – top with Sriracha Dressing
