How to Make One-pan Breakfast Sandwiches and Wraps

Do you like breakfast food? Not just in the a.m., but all day long? Me too! I don’t know why we reserve bacon, eggs and cheese or waffles and syrup just for weekend mornings. But we should be making one-pan breakfast sandwiches and wraps any day, for any meal.

Recently, Brittany from KELOLAND Living sent me a Pinterest pin of someone making one-pan breakfast sandwiches. We decided to give it a try on a KLL segment so I practiced it at home yesterday. Although delicious of course, it may turn into a six-minute comedy show when it comes time to flip the bread and eggs. (The segment aired Thursday, May 11. Watch it here or below.)

What I Learned Making One-pan Breakfast Sandwiches

  • If I’m making bacon or sausage for my sandwich in a separate pan, it’s not really a one-pan breakfast sandwich.
  • It’s hard to flip the entire sandwich—two eggs and two slices of bread—with a traditional sized spatula. That’s the part that’s comical.
  • Most recipes I see for one-pan breakfast sandwiches forget to add butter to the bread so that it toasts once flipped in the hot pan.
  • Using a soft tortilla in place of the bread works really well and it is delicious. It gets nice and crispy.

What’s So Special About One-pan Breakfast Sandwiches?

  • Well, it’s breakfast food. Duh.
  • I make breakfast sandwiches quite often. But what I liked about making them this way is that the egg sticks to the bread and the meat and cheese are melted and enveloped inside. Thus, nothing falls off the sandwich while we’re eating it.

Remember to enjoy breakfast food any day, for any meal.

Steps to Making One-pan Breakfast Sandwiches

The process of making this sandwich moves quickly so be sure to have all your ingredients ready and within reach before you start.

Step 1 Assuming you already shredded the cheese and cooked the meat, whisk two eggs in a small bowl.

Steps 2 & 3 Melt 1 tablespoon of salted butter in a pan over medium heat. Pour the whisked eggs into the hot pan.

Steps 4 & 5 While the egg is cooking, spread 1 tablespoon of butter on one side of each of the two slices of bread (using 2 tablespoons). I melted my butter and brushed it on. The eggs are ready for the bread once they are almost cooked but they are still slightly soft/runny.

Press the bread onto the eggs BUTTERED SIDE UP.

Step 6 Cook the egg just a minute or so longer. Using a large spatula, flip the egg and bread in one piece, hence the buttered side of the bread is now face down on the hot pan. (You can see I mangled mine slightly.)

Step 7 Fold the eggs that are hanging off the edge of the bread onto the bread. If desired, sprinkle with salt and pepper. Place the meats (I used bacon and fried deli ham) and cheese on top of the egg. (I like cheese on both sides so it holds everything in place better.) Fold the breads so they create a sandwich. Grill on both sides until they are as toasted as you like.

Step 8 Remove the sandwich from the pan and slice in half. Serve hot.

How to Make One-pan Breakfast Wraps

The process for making breakfast tortillas is essentially the same as the instructions with the bread.

The only differences are that you don’t need to butter the tortilla and you’ll fold two edges of the tortilla to the middle. Don’t worry, the tortilla still gets crispy.

Variations of One-pan Breakfast Sandwiches

Make your own version of one-pan breakfast sandwiches and tortillas by using ingredients you like the most. For example:

  • Instead of butter on the bread, use a mixture of mayonnaise and prepared yellow mustard. (That’s how I make our grilled cheese.)
  • Before spreading it on the bread, add seasonings to the butter like garlic powder or herbs like chives or thyme.
  • Use any type of bread or tortillas you like. Even gluten-free.
  • Make it with your favorite cheeses.
  • Try it with bagel flats.
  • When whisking the eggs, add diced onion and green pepper or other vegetables or fresh herbs.
  • Use only egg whites.
  • Make it vegetarian.
  • Spice it up with hot sauce, salsa, or spices.
