Blueberry Special K marshmallow treats

May, 10, 2021 UPDATE It’s back! In 2013, Kellogg’s made Special K Blueberry Cereal and I used it to make marshmallow treats. At some point, they stopped making it but I saw it again today at Walmart so I’m resharing the recipe. All you need is butter, marshmallows, and Special K Blueberry Cereal.

Special K Blueberry cereal is a new flavor for us and I’ve blasted through a couple boxes of it in the last few weeks. I filled a container with the fruity flakes and clusters before I ran out the door the other day. By the time I got to work, I had crumbs trailing down my shirt and in my bra. I made Special K Blueberry treats that night. The sticky marshmallows seem to keep the cereal crumbs out of my shirt.

I still love traditional Special K bars, well, as traditional as they can be since I have a special Special K bars recipe (of which I am sworn to secrecy by my sister who holds the proprietary ingredients). There are just some things best kept between sisters. People also know them as Scotcharoos.

Ingredients
  

  • 1 tablespoon unsalted butter to grease the pan
  • 4 tablespoons unsalted butter
  • 6 cups mini marshmallows
  • 6 cups Kellogg's Special K Blueberry Cereal

Instructions
 

  • Grease bottom and sides of 9×13 pan with butter.
  • In a medium saucepan over medium-low heat, melt 4 tablespoons of butter.
  • Stir in the marshmallows, coating with melted butter. Stir 1-2 minutes until marshmallows are melted.
  • Add cereal. Stir until coated.
  • Spread the cereal into the buttered pan. It helps to spray the back of a spoon with cooking spray and spread the mixture.
  • Once cooled, cut and serve. Store at room temperature in airtight container .

    1. I didn’t know that either until just a couple weeks ago. I wasn’t sure if it was new or I just hadn’t seen it before. Our favorite is vanilla almond but now I can’t decide because this one is so good! I hope you find it, Paula.
