Amber Waves of Anthem Oats with Fifth-generation South Dakota Farmers

Roots go deep at Anthem Oats. Come with me to meet fifth-generation farmers, Taylor and Cassandra Sumption, the founders behind the premium, gluten-free oat company.

The couple grows and packages premium oats for retail on nearly 400 acres near Frederick, South Dakota, 27 miles north of Aberdeen on US Highway 281, just seven miles south of the North Dakota border, and their packing and offices operation in Frederick.

Taylor’s great, great grandpa homesteaded in the area in 1882 so Taylor and Cassandra are keeping the family agriculture business alive in what’s now 142 years!

They’re focused on value-added agriculture and vertical integration to build their legacy-based, farm-to-table company—this means we can count of them for many years of delicious steel cut, old-fashioned, and quick oats and instant oatmeal cups and packets in flavors like vanilla chai, peach and cranberry, dark chocolate brownie, super fruit, pumpkin spice, and my personal favorite, maple pecan (with a heavy drizzle of Adee Honey Farms honey).

Oats Recipes from Cassandra

Cassandra shared her recipe for cheeseburger meatloaf with secret sauce (at the end of this post), Tiramisu-Inspired Overnight Oats from Eating Well and Energy Balls from Tastes Better from Scratch.

Even though Mary Bjerke uses bread or panko crumbs in her meatloaf recipe (pictured below), you could substitute with oats.

Bacon Cheeseburger Meatloaf

Ingredients
  

Meatloaf

  • lbs ground beef
  • 1 cup Anthem Oats, minute or old-fashioned, uncooked
  • ¼ cup finely chopped onion
  • 1 egg, slightly beaten
  • 8 oz tomato sauce
  • ½ tsp ground black pepper

Secret Sauce

  • cup mayonnaise
  • 2 Tbsp ketchup

Toppings

  • 8 large slices of cheddar cheese
  • 8 strips of bacon, cooked and halved
  • 2 medium tomatoes, sliced

Instructions
 

Meatloaf

  • Heat oven to 350℉. Spray 9 x 13 metal baking pan with cooking spray. 
  • Combine all meatloaf ingredients in a large bowl, mix lightly but thoroughly. Press mixture into pan. Bake 30-35 minutes or until the meatloaf is to medium doneness (160℉) and center is no longer pink. Drain off any juices. 

Secret Sauce

  • Combine ingredients in a small bowl, mix well. Spread over hot meatloaf, completely covering, cut meatloaf into 8 rectangles. (Do not remove from pan)

Toppings

  • Top each rectangle with cheese, 2 half pieces bacon and tomato slice. Cook for an additional 5-6 minutes or until the cheese is melted.  
  • Note from Cassandra: I've never put the tomatoes on top, primarily because my kids aren't huge fans. But it would probably be good. I usually crumble my bacon rather than halving it.
