Bars so good there should be rap song about them. I don't know what gets me most, the creamy chocolate filling, the slightly crunchy peanut butter oat topping or the itty bitty Reese's Pieces.
¾cupunsalted butter, softened to room temperature , 1½ sticks
¾cupcreamy peanut butter
2cupsdark brown sugar
2large eggs
1teaspoonpure vanilla extract
2½cups quick-cooking oats
2½cupsall-purpose flour
1teaspoon baking soda
½teaspoonsalt
Chocolate Layer
½cupunsalted butter, 1 stick
⅔cupunsweetened cocoa
⅓cupsugar
14ozsweetened condensed milk
1½teaspoonspure vanilla extract
1½cupsMini Reese's Pieces
Instructions
Heat oven to 350°F. Grease 9x13 pan or line with parchment paper.
Peanut Butter Oat Dough
In the large of an electric mixer fitted with the paddle attachment, beat 3/4 cup softened butter, peanut butter and brown sugar until well blended.
Beat in eggs and vanilla.
In a separate medium bowl, stir together flour, oats, salt, and baking soda; gradually beat into peanut butter mixture. Batter will resemble cookie dough.
Set 2 cups of the oat batter aside. Press remaining dough evenly into a greased 13x9 inch baking pan.
Chocolate Layer
Melt ½ cup butter in a saucepan over low heat. Stir in cocoa and white sugar. Add sweetened condensed milk; stirring constantly over low heat until smooth and thick. Remove from heat and stir in 1½ teaspoons of vanilla.
Spread chocolate mixture evenly over oatmeal dough in the pan. Sprinkle the Reese's candies over the chocolate. Crumble the reserved two cups of dough over the candies.
Bake 25 minutes or until top is lightly brown. Cool completely on a wire rack.
