Pumpkin Chip Cookie Bars

Ingredients
  

  • cups unsalted butter, (3 sticks) softened to room temperature
  • 2 cups brown sugar
  • 1 cup sugar
  • 15 oz pure pumpkin puree, NOT pumpkin pie mix
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 4 cups all-purpose flour
  • 2 cups quick-cooking oats
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon salt
  • 2 cups semisweet chocolate chips

Instructions
 

  • Heat oven to 350°F. Grease a 15x10 pan.
  • In the large bowl of an electric mixer with paddle attachment, cream butter and sugars.
  • Beat in the egg, pumpkin and vanilla.
  • In a separate bowl, combine the flour, oats, baking soda, cinnamon and salt; gradually add to creamed mixture. Stir in the chocolate chips.
  • Spread batter in greased pan. Bake at 350° for 25-30 minutes or until toothpick inserted in center comes out clean. Remove from oven and cool completely before cutting into bars.
