1½cupsunsalted butter, (3 sticks) softened to room temperature
2cupsbrown sugar
1cup sugar
15ozpure pumpkin puree, NOT pumpkin pie mix
1large egg
1teaspoon pure vanilla extract
4cupsall-purpose flour
2cupsquick-cooking oats
2teaspoons baking soda
2 teaspoonsground cinnamon
1teaspoonpumpkin pie spice
1teaspoonsalt
2cupssemisweet chocolate chips
Instructions
Heat oven to 350°F. Grease a 15x10 pan.
In the large bowl of an electric mixer with paddle attachment, cream butter and sugars.
Beat in the egg, pumpkin and vanilla.
In a separate bowl, combine the flour, oats, baking soda, cinnamon and salt; gradually add to creamed mixture. Stir in the chocolate chips.
Spread batter in greased pan. Bake at 350° for 25-30 minutes or until toothpick inserted in center comes out clean. Remove from oven and cool completely before cutting into bars.
