These cake-like bars, warm with cinnamon and nutmeg, are even better than banana bread, with the creamy vanilla frosting making them a delightful dessert.
¾cupunsalted butter, softened to room temperature, 1½ sticks
1½teaspoons pure vanilla extract
2eggs, large
1½cupsmashed ripe bananas
Vanilla Frosting
6ozcream cheese, softened to room temperature
2tablespoonsunsalted butter, softened to room temperature
2cupspowdered confectioners sugar
2teaspoons pure vanilla extract
Instructions
Heat oven to 350°F. Grease 15x10 pan.
In a medium bowl, combine flour, baking powder, cinnamon, nutmeg, and salt.
In a large bowl beat brown sugar, butter and vanilla extract. Add eggs one at a time, beating well after each addition.
Beat in bananas. Gradually beat in flour mixture.
Spread into prepared pan. Bake for 20-25 minutes of until wooden pick inserted in center comes out clean. Cool completely in pan.
Vanilla Frosting
Beat cream cheese, butter and powdered sugar in a small mixer until smooth. Stir in vanilla. Spread on completely cooled bars. Store in the refrigerator and serve at room temperature.
